When I said to Victoria that she is a community leader as a small business owner going green --she rolled her eyes. Apparently she thinks gathering and transporting her own recycling and composting to the Cherry Creek Center (https://www.denvergov.org/content/denvergov/en/trash-and-recycling/recycling/dropoff.html) is how all small business owners have to operate because of the expense. Perhaps all vendors and food runners expect their clients to insist on steps to reduce single-use plastic in their business dealings (details to come in future blogs). And maybe all new hires to food service jobs expect training on how to use their customer service as the front line in reducing waste and cost (you guessed- future blog).
Well. Victoria is a leader in both thought and action. In this first year as owner of Regal Bakery and Cafe, she has done all the above, and more. This blog will tell the story --past, present and future, of how a small business can be green in Denver.
